
I am a proud Hummus aficionado. Hummus is a unique culinary delight in the Middle East and in Israel it is an official art form. If you are unfamiliar (sacrilege) with this delight, it is a mixture of ground chick peas, sesame seed, olive oil, lemon and garlic. Served with freshly baked pita bread, a hard boiled egg, raw onions, a side of warm chick peas and at times, a side dish of lemon juice and garlic mixture, it practically represents its own food group.
There are variations on the dish, most popular the “Masabacha” a heated mixture of Hummus and chick peas and some other special ingredients that constitute a well protected family secret in most “Humusiot” (restaurants serving Humus).

In the Western Galilee 7 miles north east of Akko (Acre) there is a small village called Kfar Yasif. The inhabitants are Arab, Druze and Christians. There is a family restaurant that specializes in Hummus in Kfar Yasif, proudly owned by the Abu Maher family. These fourth generation Hummus masters have perfected the art to unprecedented levels and the father and his sons deliver a sublime Hummus experience. The family owns over 40 acres of olive trees making their own blend of olive oil for generations, keeping a great tradition alive.
The Abu Maher restaurant has some prominent followers including known celebrities and politicians that come by for a plate of the good stuff.
